White Cross Street Market
The white cross street, located in Islington, London(between the old street in the north and the silk street in the south), has run the street market for over 150 years.
From 12 to 2, at the lunch time, there having up to 50 food markets including this salad wrap trailer located at the very starting point from the old street.
This animation shows a day-routine (from 11am to 4pm) of the food trailer.
What is Food?
The seller starts to make a food directly after the customer place the order. There are several ingredients aligned in front of him so that he can choose his selection while looking the process.
So, the outcome of the salad wrap can be defined as "customized mixed ingredients wrapped in the tortilla".
But here the problem, the customer does NOT interact with food much. They have to shout out their choice to the seller and this process takes time causing a long queue.
HOW CAN IT BE MORE EFFICIENT?
